Description
This asparagus pasta recipe is fresh, simple, and perfect for a quick dinner or easy lunch.
Ingredients
200g pasta
1 bunch fresh asparagus, trimmed and cut
2 cloves garlic, minced
2 tablespoons olive oil
1/4 cup grated parmesan cheese
1 tablespoon lemon juice
Salt to taste
Black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta until al dente
2. Heat olive oil in a pan and cook the garlic until fragrant
3. Add asparagus and cook until tender but still firm
4. Reserve some pasta water, then drain the pasta
5. Add pasta to the pan and toss with asparagus
6. Add a splash of pasta water and mix well
7. Stir in parmesan cheese and lemon juice
8. Season with salt and pepper, then serve warm
Notes
Do not overcook the asparagus
Always reserve pasta water
Add chicken or shrimp if desired
