Description

This asparagus potato salad is creamy, fresh, and perfect for picnics, meal prep, or a simple side dish.


Ingredients

2 cups potatoes (boiled and chopped)

1 bunch fresh asparagus, trimmed and cut

1/2 cup mayonnaise or plain yogurt

1 tablespoon mustard

1 tablespoon lemon juice

Salt to taste

Black pepper to taste

Optional: fresh herbs, onions, or boiled eggs


Instructions

1. Boil potatoes until tender, then drain and let cool

2. Blanch asparagus briefly in boiling water, then cool

3. In a bowl, mix mayonnaise, mustard, and lemon juice

4. Add potatoes and asparagus to the bowl

5. Season with salt and pepper

6. Mix gently to combine

7. Chill slightly or serve at room temperature

Notes

Do not overcook potatoes to keep their shape

Cool ingredients before adding dressing
