Description

Ingredients

3 large eggs
⅓ cup pure maple syrup
1 teaspoon vanilla extract
½ cup oat flour
1 teaspoon baking powder

¼ teaspoon ground nutmeg
Pinch of salt
1 cup fresh blueberries


Instructions

Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish
In a blender, mix cottage cheese, eggs, maple syrup, and vanilla until smooth
In a bowl, combine oat flour, baking powder, cinnamon, nutmeg, and salt
Fold dry ingredients into wet mixture, then gently mix in blueberries
