Ingredients
1 ½ cups full-fat cottage cheese
2 large eggs
1 cup oat flour (or homemade rolled oats blended)
¾ cup pure maple syrup
1 tsp ground cinnamon
1 ½ cups milk (dairy or non-dairy)
1 tbsp baking powder
1 ½ cups fresh blueberries
Instructions
Preheat oven to 375°F (190°C).
In a blender, combine cottage cheese, eggs, maple syrup, cinnamon, and milk. Blend until smooth.
In a bowl, mix oat flour and baking powder. Add to blender and blend until just combined.
Gently fold in blueberries to avoid overmixing.
Pour batter into a greased 9-inch round or 8×8-inch baking dish.
Bake for 18-22 minutes, or until golden and a toothpick inserted in center comes out clean.
Cool slightly before serving warm.
Notes
Blending the wet ingredients ensures a tender, cake-like texture.
Use fresh blueberries for best results; frozen berries may add excess liquid.
