Description

A protein-packed, golden-baked morning treat combining creamy cottage cheese, oat flour, and sweet blueberries. Foolproof, fluffy, and ready in 45 minutes for breakfast or brunch.

1 ½ cups full-fat cottage cheese
2 large eggs
1 cup oat flour (or homemade rolled oats blended)
¾ cup pure maple syrup
1 tsp ground cinnamon
1 ½ cups milk (dairy or non-dairy)
1 tbsp baking powder
1 ½ cups fresh blueberries


Instructions

Preheat oven to 375°F (190°C).
In a blender, combine cottage cheese, eggs, maple syrup, cinnamon, and milk. Blend until smooth.
In a bowl, mix oat flour and baking powder. Add to blender and blend until just combined.
Gently fold in blueberries to avoid overmixing.
Pour batter into a greased 9-inch round or 8×8-inch baking dish.
