8 large eggs
¾ cup 2% or full-fat cottage cheese
½ cup shredded Parmesan cheese
3 cups chopped fresh spinach
½ cup finely diced yellow onion
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon black pepper


Instructions

Preheat oven to 350°F (175°C)
Line a 9×9-inch baking dish with nonstick cooking spray
In a large bowl, whisk together eggs, cottage cheese, garlic powder, onion powder, salt, and pepper until smooth
Stir in shredded Parmesan, spinach, and yellow onion
Pour mixture into prepared baking dish
