Ingredients
1 pound chicken thighs, boneless skinless
2 cloves garlic, minced
1 tablespoon lime juice
2 tablespoons olive oil
1 tablespoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small corn or flour tortillas
1/2 cup finely chopped onion
1/2 cup finely chopped tomato
1/4 cup finely chopped cilantro
1 finely chopped jalapeño (optional)
1 teaspoon lime juice
Pinch of salt
Instructions
Combine chicken, garlic, lime juice, olive oil, chili powder, paprika, garlic powder, salt, and pepper in a bowl. Marinate for 10-15 minutes.
Preheat grill or skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden and cooked through.
In a separate bowl, mix onion, tomato, cilantro, jalapeño (if using), lime juice, and salt for the pico de gallo.
Warm tortillas on the grill or in a pan. Assemble tacos with cooked chicken, top with pico de gallo, and serve immediately.
Notes
