A quick and flavorful 30-minute fajitas marinade chicken recipe with a vibrant, smoky, and savory profile. Perfect served in tortillas, over rice, or as a hearty main dish.
Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon chili powder (adjust to taste)
1 teaspoon ground cumin
2 cloves garlic, minced
Juice of 1 lime (about 2 tablespoons)
1 teaspoon salt
1/2 teaspoon black pepper
1 red onion, sliced (optional)
1 bell pepper, sliced (optional)
Instructions
In a small bowl, whisk together olive oil, chili powder, cumin, minced garlic, lime juice, salt, and black pepper to create the marinade.
Place chicken breasts in a large bowl or resealable bag and pour in the marinade. Toss or massage to coat evenly.
Let marinate for 30 minutes at room temperature.
Heat a large skillet or grill over medium-high heat. Add the chicken breasts and cook for 6-8 minutes per side, or until browned and cooked through with no pink in the center.
If desired, cook optional onions and bell peppers during the last 5 minutes of chicken cooking.
Serve warm in tortillas, over rice, or as a standalone dish with your favorite sides.
Notes
Marinate for at least 15 minutes for bolder flavor, but no less than 10 minutes if rushed.
Substitute chicken thighs for a juicier result if preferred.
Adjust chili powder to tailor the spice level to your taste.
