Ingredients
2–3 cups mixed greens (arugula, spinach, or butter lettuce)
1/4 cup fresh tender herbs (mint, dill, and/or basil)
1/4 cup blueberries
1/4 cup thin-sliced cucumber
1/4 cup corn kernels
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
Freshly ground black pepper
Instructions
Wash and pat dry the mixed greens.
Tear the herbs and add to the greens.
Add blueberries, cucumber, and corn to the bowl.
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
Pour the vinaigrette over the salad and toss to coat.
Serve immediately or chill briefly.

Store leftovers in an airtight container in the refrigerator for up to 1 day.
