Description

A vibrant 10-minute salad featuring sweet strawberries, salty feta, tangy balsamic, and crisp greens. Perfect as a light main or side dish.


Ingredients

5 oz (140g) spring green salad mix
10 strawberries, hulled and sliced
½ cup (70g) crumbled feta cheese
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
1/3 cup chopped pecans or walnuts (optional)
Fresh mint leaves for garnish (optional)
Freshly ground black pepper to taste


Instructions

Wash and dry the spring green salad mix.
Toss the greens in a large salad bowl.
Add sliced strawberries and crumbled feta.
Sprinkle chopped nuts over the salad.
In a small bowl, whisk together balsamic vinegar, olive oil, and pepper.
Drizzle the dressing over the salad.
Garnish with fresh mint leaves.

Notes

Substitute spring greens with baby spinach and arugula.
Use raspberries or blackberries if strawberries are unavailable.
Omit feta for a vegan version and use salted tofu crumbles instead.
