Ingredients
2 cups chopped ripe tomatoes (about 4 medium)
1 cup finely chopped white onion (about 1 small)
1 medium jalapeño pepper, ribs and seeds removed, finely chopped
¼ cup lime juice
¼ cup chopped fresh cilantro leaves
1 teaspoon salt
1 teaspoon ground cumin
Instructions
Finely chop the onion and let sit in a bowl for 5 minutes to enhance flavor.
Prep the jalapeño by removing ribs and seeds for milder heat, then finely chop.
Add lime juice immediately after chopping the onions to prevent browning.
Stir in chopped tomatoes, cilantro, salt, and cumin.
Toss gently until combined. Taste and adjust salt or lime juice as needed.
Notes
Use perfectly ripe (but not overripe) tomatoes for the best balance.
Store in a sealed container in the fridge for up to 2 days.
Omit jalapeño for a mild version or add serrano pepper for extra heat.
