Ingredients
5 heaping cups fresh strawberries, hulled and quartered
1/4 cup granulated white sugar (for filling)
1 teaspoon pure vanilla extract
3 tablespoons cornstarch
1 cup all-purpose flour (for topping)
3/4 cup old-fashioned oats
2/3 cup granulated white sugar (for topping)
2/3 cup unsalted butter, chilled and cut into small cubes
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, combine strawberries, 1/4 cup sugar, vanilla extract, and cornstarch. Toss to coat and let sit for 10 minutes.
In a separate bowl, mix flour, oats, and 2/3 cup sugar for the topping.
Cut in chilled butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
Transfer the strawberry mixture into a 9-inch oven-safe baking dish and evenly sprinkle the oat crumble topping over the surface.
Bake for 25–30 minutes or until the topping is golden brown and the filling is bubbly.
Let cool slightly before serving.
Notes
For a vegan version, substitute butter with vegan butter and use a plant-based sugar if needed.
Allow the dessert to rest for 10 minutes after baking for the filling to set slightly.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
