2 small yellow onions (or 1 large), sliced
3 bell peppers (any color), sliced
1.5 lbs boneless chicken breasts, thinly sliced
2 Tbsp olive oil
1 Tbsp fresh lime juice
1/2 avocado, sliced (optional, for serving)
1 lime, wedges (optional, for serving)


Instructions

Preheat oven to 400°F (200°C)
In a small bowl, mix fajita seasoning ingredients until combined
Place sliced onions and peppers in a large bowl
In another bowl, toss chicken slices with olive oil and lime juice
Sprinkle fajita seasoning over the chicken and mix until coated
Transfer chicken and vegetables to a parchment-lined rimmed baking sheet
Spread in a single layer, ensuring ingredients aren’t overcrowded
Bake for 25-30 minutes, flipping halfway through, until chicken is cooked through and vegetables are tender
Let rest 5 minutes before serving
Top with avocado slices and lime wedges if desired
