Ingredients
4 mini or Persian cucumbers, sliced
1 lb small radishes, thinly sliced
4 green onions, thinly sliced
1/3 cup finely chopped red onion
1 cup chopped fresh dill
2 lemons (juiced and zested, about 3 tbsp juice)
2 tbsp olive oil
2 tbsp honey
Instructions
Finely slice the mini cucumbers and radishes into a large bowl.
Thinly slice the green onions and thinly chop the red onion.
Combine all vegetables in the bowl.
In a small bowl, whisk together lemon juice, lemon zest, olive oil, honey, and salt.
Pour dressing over the salad and toss gently.
