Description

A fresh 20-minute Spring Mix Salad with tangy balsamic-lemon dressing, creamy goat cheese, crunchy sunflower seeds, and crisp cucumbers. Perfect as a side or light meal!


Ingredients

6 cups spring mix lettuce
1 English cucumber, sliced
1/2 cup shelled sunflower seeds
1/4 cup crumbled goat cheese
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and freshly ground pepper


Instructions

Wash and dry spring mix lettuce thoroughly
Slice the cucumber into half-moons
Toast sunflower seeds in a dry skillet over medium heat for 3-4 minutes until golden and fragrant
In a small bowl, whisk together balsamic vinegar, lemon juice, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing
In a large salad bowl, combine lettuce, cucumber, and sunflower seeds
Pour dressing over the salad and toss to coat
Top with crumbled goat cheese before serving

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days
For added protein, serve with grilled chicken or chickpeas
Variation: Substitute toasted walnuts for sunflower seeds if preferred
