Ingredients
1.5 pounds boneless, skinless chicken thighs
4 Tablespoons orange juice (fresh is best)
2 Tablespoons apple cider vinegar
1½ Tablespoons fresh lime juice
3 cloves garlic, minced
1½ Tablespoons chipotle chili powder
2 teaspoons dried Mexican oregano
2 teaspoons paprika
¼ teaspoon ground cinnamon
1 teaspoon kosher salt
Freshly ground black pepper
24 white corn tortillas
2 cups Pico de gallo (store-bought or homemade)
1 avocado, sliced
1 cup chopped cilantro
Juice of 1 lime
¼ cup diced red onion
¼ cup thinly sliced jalapeños
Instructions
Combine chicken thighs, orange juice, apple cider vinegar, lime juice, garlic, chipotle chili powder, oregano, paprika, cinnamon, salt, and pepper in a resealable bag. Marinate for 15 minutes.
Preheat grill to medium-high heat (375°F/190°C). Remove chicken from marinade and discard excess.
Grill chicken for 4-5 minutes per side, or until fully cooked (165°F/74°C) and slightly charred.
Warm tortillas on the grill for 10-15 seconds per side.
