Ingredients
1 1/2 lbs. lean ground beef (93% lean)
1 Tbsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp basil (optional)
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes, drained
1/4 cup tomato sauce
1/4 cup water
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1 cup corn kernels (fresh, canned, or frozen)
1 cup shredded lettuce
1/2 cup salsa (mild or spicy)
1/4 cup shredded cheddar cheese
1/4 cup sour cream
1 avocado, sliced
1 lime, cut into wedges
Instructions
Heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking apart with a spoon, about 3-4 minutes. Drain excess fat. Add chili powder, garlic powder, onion powder, basil (if using), cumin, salt, and black pepper; mix well.
Stir in drained black beans, diced tomatoes, tomato sauce, and water. Bring to a simmer, reduce heat, and cook for 10-15 minutes until thickened and flavors meld.
Let the mixture cool slightly. Serve in bowls and top with corn, lettuce, salsa, cheese, sour cream, avocado slices, and lime wedges.
Notes
