Description

Create three stunning viral pistachio desserts: Pistachio Chocolate Baklava, Cream Cinnamon Rolls, and a Berry Trifle. Rich, elegant, and surprisingly simple with convenient ingredients.

1 sheet pre-made puff pastry, thawed
1/4 cup powdered sugar
1/4 tsp salt
1/2 cup Bettergoods Pistachio Spread (or homemade)
1/2 cup semi-sweet chocolate chips, melted
1 cup heavy cream (or non-dairy alternative)
1 cup powdered sugar (for frosting)

1 tsp vanilla extract
24 mini cinnamon roll dough (or store-bought)
1 cup pistachios, chopped
1/2 cup cream cheese (softened)
1 cup mascarpone cheese
1/2 cup sugar
1 tbsp lemon zest
1/2 cup milk or non-dairy creamer
1 1/2 cups sour cream (or vegan alternative)
1 cup crushed pistachios
8 oz jasmine or regular tea (steeped, chilled)
1 cup mixed berries (strawberries, blueberries, raspberries), chopped
1/4 cup sugar (for berries)
1/2 tsp rosewater (optional, non-alcoholic)
1/4 cup mint leaves, chopped (for garnish)


Instructions

Prepare puff pastry, rolling it into a rectangle. Distribute pistachio spread evenly, dot with melted chocolate, then layer chopped pistachios. Roll tightly, slice into 1/2-inch pieces, and bake at 375°F (190°C) for 18-20 minutes until golden.
Beat cream, powdered sugar, and vanilla until stiff peaks form. Chill in the refrigerator.
Unroll cinnamon roll dough into 4 rectangles. Spread with pistachio cream (mix 1 cup Bobs Red Mill pistachio flour with 1/3 cup softened butter and 1/3 cup sugar). Roll tightly, slice into 12 bites, and bake at 350°F (175°C) for 12-15 minutes.

Frost with cream cheese mixture (blend cream cheese, mascarpone, sugar, and lemon zest until smooth).
Whisk heavy cream, milk, sugar, and tea until thick enough to hold a ribbon. Let chill for 1 hour. Layer trifle: pour thickened tea mixture in a glass bowl, top with half the berries, crushed pistachios, then repeat. Garnish with fresh mint and rosewater if using.
